芹菜籽精油抗氧化能力的研究Study on the antioxidant activities of celery seed essential oil

摘要(Abstract):
芹菜籽精油(CSEO)的抗氧化能力的测定是基于羟基自由基清除能力、DPPH.清除能力、总体抗氧化能力、抗亚油酸脂质过氧化能力四个方面,并与其他的合成抗氧化剂如BHT、Vc、PG做比较。实验结果表明,在一定浓度范围,CSEO清除羟基自由基的能力和BHT相当;对DPPH.的清除率随浓度增大而增大;在总体抗氧化能力方面,CSEO已经超过了BHT和PG;此外,CSEO能有效抑制亚油酸的过氧化反应。实验表明CSEO具有较好的抗氧化效果。
