山葵调味酱的制备及防腐保鲜技术研究Study on Preparation and Preservation Technology of Wasabi Sauce

摘要(Abstract):
文章综合考虑复合调味料的食品添加剂使用标准及产品风味口感,确定了山葵酱的配料及配比,分别在室温及低温(4℃)条件下制得风味较佳的低盐型山葵调味酱,测定其在无防腐处理、外加防腐剂(烯丙基异硫氰酸酯0.01%,V/W;山梨酸钾0.05%,W/W)、高温灭菌(80℃,30min)及防腐剂(山梨酸钾0.05%,W/W)复合高温灭菌处理(80℃,30min)下的菌落总数。结果表明:室温制备条件下,仅有防腐剂复合高温灭菌处理后制品的菌落总数符合食品安全国家标准(<10cfu/g),无防腐处理与添加0.05%山梨酸钾所得制品的细菌总数相当,均远高于添加0.01%烯丙基异硫氰酸酯(AITC)后的菌落总数。低温制备条件下,无防腐处理山葵酱的菌落总数即可低于10cfu/g。由于山葵酱中含有较强抑菌能力的AITC,因而进一步考察了加工温度及配料对其主要风味成分AITC抑菌效果的影响。AITC的抑菌效果随处理温度的升高而变差;含适宜浓度NaCl、乙酸及植物油的体系有助于AITC抑菌效果的增强,而乙醇会减弱其抑菌效果,上述研究结果可为山葵调味酱生产及防腐工艺的确立提供参考。
