文冠果壳多功能浸提液的制备及其在乳饮料中的应用Preparation of Multifunctional Xanthoceras sorbifolium Husk Extract and Its Application in Milk Beverage

摘要(Abstract):
为实现文冠果壳的高值化利用,开发了一款新型多功能奶茶饮品。通过单因素试验与正交试验优化文冠果壳浸提液的提取工艺,并测定体外降尿酸、降血糖及抗氧化活性。随后,以该浸提液为基础原料,结合单因素试验与响应面试验,以感官评分为指标,优化了奶茶配方。结果表明,文冠果壳浸提液对黄嘌呤氧化酶的抑制率高达89.32%,表现出显著的降尿酸潜力;在降血糖方面,其α-葡萄糖苷酶抑制活性突出,稀释10倍后抑制率仍达96.31%;同时该浸提液还具备良好的抗氧化活性,对DPPH自由基与ABTS自由基的清除率均超过90%。所开发的奶茶最佳配方:以100 mL纯牛奶为基准,添加红茶3 g、木糖醇7 g、纯净水80 mL和浸提液40 mL。在此优化条件下制得的奶茶感官评分为91.27分,蛋白质含量为1.03%,茶多酚含量为0.50 mg/g,菌落总数为9 CFU/mL。该研究结果表明,文冠果浸提液极具功能饮品开发潜力,可为文冠果副产物的综合利用提供一定科学依据,并为新型奶茶饮品的开发奠定相关理论基础。
