低钠盐干腌马鲛鱼加工过程中的品质变化研究Study on Quality Changes of Low Sodium Salt Dry-Cured Mackerel During Processing

摘要(Abstract):
为研究低钠盐干腌马鲛鱼加工过程中的品质变化,以50%氯化钾代替钠盐腌制,分别测定腌制前、腌制后、风干1 d、风干3 d和风干5 d的马鲛鱼鱼肉的水分含量、水分活度、pH、色差、质构和蛋白质氧化性质的变化。结果表明,水分含量、水分活度、pH分别从72.86%,0.986,6.24降至43.19%,0.827,6.05。L~*值、a~*值、b~*值分别从19.83,-2.21,-0.64增至43.16,4.42,8.84。硬度、内聚性、弹性、胶黏性和咀嚼性分别从0.976 N、0.516 Ratio、2.522 mm、0.564 N、1.426 mJ升至11.836 N、0.573 Ratio、2.859 mm、7.504 N、21.564 mJ。肌浆蛋白和肌原纤维蛋白的总巯基含量分别从1.829μmol/g和0.71μmol/g降至0.777μmol/g和0.32μmol/g。肌浆蛋白和肌原纤维蛋白的活性巯基含量分别从0.371μmol/g和0.62μmol/g降至0.07μmol/g和0.22μmol/g。肌浆蛋白和肌原纤维蛋白的羰基含量分别从2.09μmol/g和0.67μmol/g升至2.976μmol/g和1.38μmol/g。肌浆蛋白和肌原纤维蛋白的疏水性含量分别从20.08μg和72.33μg升至101.51μg和85.13μg。结果表明,蛋白质在腌制阶段就开始出现部分氧化,风干时期更为明显。该研究为低钠盐马鲛鱼加工工艺提供了一定的技术支持和理论参考。
