鸡油的加工技术及开发利用研究进展Research Progress on Processing Technology, Development and Utilization of Chicken Oil

摘要(Abstract):
我国是肉鸡生产大国,肉鸡屠宰加工过程中将产生大量的油脂原料,如何对此进行高值化的利用成为重要的研究课题。文章综述了近年来有关鸡油的化学组成、提制方法、精炼、增香和开发应用等方面内容,目的是为鸡油的加工利用提供参考,对鸡油的研究方向进行展望。
