不同品种大蒜提取物对层出镰孢菌的抑菌作用分析Analysis of Bacteriostasis of Different Varieties of Garlic Extracts on Fusarium proliferatum

摘要(Abstract):
大蒜(Allium sativum)是一种有着独特气味、含有抗菌活性的葱属植物。该研究比较了4种不同大蒜(太仓白皮、二水早、红七星和独蒜)的抗菌活性,抗菌活性最强的是"红七星",其次是"二水早"。利用GC-MS对大蒜提取物进行成分分析,结果显示:"二水早"和"红七星"中含有大量的5-羟甲基糠醛。此外,"二水早"和"红七星"中的硫化物含量和抑菌活性也高于其他两种大蒜。根据电解质和蛋白质的泄漏量、AKP活性和透射电镜观察的结果,"红七星"提取物的抗菌活性机制可能对其膜的完整性起破坏作用。
