竹笋发酵中挥发性物质及菌群多样性动态分析Dynamic Analysis of Volatile Substances and Microbial Community Diversity During the Fermentation of Bamboo Shoots

摘要(Abstract):
采用顶空固相微萃取-气相色谱-质谱联用技术(HS-SPME-GC-MS)对不同发酵阶段酸笋样品中的特征风味物质进行分析,同时运用二代高通量测序技术测定自然发酵不同时期的微生物菌群结构。结果表明,发酵过程中共检测出88种挥发性化合物,对甲酚是酸笋中特殊味道的主体成分,同时,在研究过程中也发现,二甲胺等有害物质随着发酵过程的进行而消失。环辛醇、环庚醇、乙酸、乳酸、苯酚等物质在发酵中、后期形成;麻竹笋发酵的不同时期菌群结构多样性改变显著。发酵初期优势细菌菌群主要有乳球菌属、魏斯氏菌属和肠杆菌属;发酵中期优势细菌菌群主要有明串珠菌属和片球菌属;发酵末期优势细菌菌群主要是乳杆菌属。优势菌群-挥发性组分的Pearson相关性分析发现,乳杆菌属和乳球菌菌属与发酵过程中的挥发性物质大多呈正相关。研究结果阐明了麻竹笋自然发酵过程中挥发性物质形成与微生物菌群之间的关系,为酸笋中优势功能菌株的筛选和定向发酵提供了基础数据。
