泡辣椒中产气微生物控制方法探究Study on the Microbial Control Method of Aerogens in Pickled Pepper

摘要(Abstract):
从胀袋泡辣椒中筛选Pseudomonas azotoformans,Kazachstania exigua和Saccharomyces cerevisiae产气微生物为研究对象,研究山梨酸钾、脱氢乙酸钠、苯甲酸钠和乙二胺四乙酸二钠对产气微生物的控制效果。实验结果表明:山梨酸钾、脱氢乙酸钠和苯甲酸钠均对产气微生物有明显的抑制效果,采用复配防腐剂结合响应面法进行数据分析,考虑实际生产需要,确定山梨酸钾0.30g/L,脱氢乙酸钠0.25g/L,苯甲酸钠0.30g/L进行组合,对3株产气微生物的抑制率达到99.50%以上。通过验证该复配防腐剂,能控制泡辣椒产品的胀袋问题,延长产品的保质期。
