紫胡萝卜花青素微胶囊工艺优化Optimization of the Preparation Technology of Purple Carrot Anthocyanin Microcapsule

摘要(Abstract):
微胶囊化包埋可减缓花青素的氧化速度。响应面法优化双复合酶(纤维素酶、果胶酶)提取紫胡萝卜花青素工艺,以紫胡萝卜花青素得率为响应值,Plackett-Burman设计筛选影响因素,Box-Behnken设计对复合酶比例(纤维素酶、果胶酶)、加酶量、酶解温度和酶解时间进行优化,获得了最佳工艺参数为复合酶比例1.5∶1,加酶量2.0%,酶解温度60℃,酶解时间60min;以大豆分离蛋白、麦芽糊精为壁材,采用喷雾干燥法制备花青素微胶囊,以花青素微胶囊包埋率为指标,通过单因素和正交试验对花青素微胶囊的配方和工艺进行了研究,获得了制备花青素微胶囊的最佳工艺条件:芯材壁材比例2∶5,壁材质量比(大豆蛋白、麦芽糊精)为3∶5,固形物含量为20%,单甘脂添加质量分数为1.5%。按此最佳工艺条件制备的花青素微胶囊包埋率达95.31%。
