党参和桂圆对鸡汤品质的影响Effect of Codonopsis and Longan on Quality of Chicken Soup

摘要(Abstract):
为研究广式鸡汤中药材对鸡汤品质的影响,通过感官评价与化学分析法对党参桂圆鸡汤的滋味和营养成分进行分析,结果显示:添加党参和桂圆后,鸡汤的蛋白质含量从0.064 4 g/100 g提高至0.532 0 g/100 g,总糖含量从0.003 2 g/100 g提高至2.481 g/100 g,还原糖含量从0 g/100 g提高至2.4 g/100 g,游离氨基酸含量从86 981.14 mg/L提高至123 099.7 mg/L,而脂肪含量从0.329 5 g/100 g降低至0.115 0 g/100 g,鸡汤的风味、鲜味和甜味等的感官评分升高,油腻感的感官评分降低。同时,党参多糖和党参炔苷等功能性成分的含量分别从78.13 mg/L和0 mg/L提高至1 271.23 mg/L和2.22 mg/L,广式鸡汤的功能价值得到量化。党参和桂圆的添加不仅提高了鸡汤的风味和滋味,而且强化了其功能价值,这为党参和桂圆对鸡汤的品质和功能性成分的贡献提供了数据支撑和量化指标,为后续深入研究提供了理论基础和数据研究。
