负载姜黄素的智能pH值指示膜的制备及性能研究Study on Preparation and Performance of Intelligent pH Value-Indicator Membrane Loaded with Curcumin

摘要(Abstract):
肉类腐败过程中产生的挥发性成分会导致包装环境的pH值变化,姜黄素是一种天然来源的多酚物质,在酸碱方面具有指示作用。该研究以姜黄素为显色指示剂,制备了一种对pH值具有敏感性的智能复合指示膜,并将其应用于食品新鲜度的监测及食品保鲜。以天然蚕丝为基质,通过浇铸法和浸渍法将含量分别为0%、1%、3%、5%、7%的姜黄素负载到天然蚕丝纳米纤维膜基质中,并对该膜的理化指标和基本性能进行了综合研究,实验结果表明,在姜黄素含量不高于3%的条件下,筛选出有最佳pH值响应性能的智能指示膜为SNF/CUR-3,姜黄素的引入使得复合膜的颜色随着食品腐败程度的增加由黄色变为红色,基于这种随环境pH值变色的现象,将负载姜黄素的天然蚕丝纳米纤维膜应用于肉类新鲜度的监测以评估其在实际应用中的有效性和可靠性。这些结果进一步明确了该实验制备得到的复合膜用于监测食品如果蔬和肉制品等的新鲜度的可行性。
