基于偏最小二乘回归法分析陈醋理化指标和品质Analysis of Physicochemical Indexes and Quality of Aged Vinegar Based on Partial Least Squares Regression Method

摘要(Abstract):
以南阳市大型商超市售的3种陈醋为研究对象,参考国家标准检测方法对陈醋的总酸含量、不挥发性酸含量及pH值进行对比分析;以近红外光谱技术结合偏最小二乘回归定量分析法,确定最佳进光光程、最优流量及最佳预处理方式,并在此条件下对3种陈醋进行判别分析,从而确定基于偏最小二乘回归法分析陈醋理化指标的方法。结果显示,3种陈醋样品均符合国家标准规定的陈醋pH值(pH 3.6~3.9),3种陈醋样品的pH值分别为3.71±0.02,3.65±0.01和3.82±0.01;3种陈醋样品中总酸和不挥发性酸含量略有不同,分别在(0.567±0.011)~(0.593±0.02) g/L和(0.148±0.012)~(0.215±0.018) g/L。在进行近红外光谱检测中,在最佳光程选择上,去掉异常样品后pH值检测和不挥发性酸检测的最佳光程为3 mm,总酸检测的最佳光程为2 mm;在陈醋流量选择上,pH值检测和总酸检测应控制流量为0.2 L/min,不挥发酸检测应控制流量为0.6 L/min;在光谱预处理条件选择上,pH值检测和不挥发性酸检测应选择SNV预处理方式,而总酸检测应选择5点平滑预处理。结果表明,利用近红外光谱结合偏最小二乘回归法可以进行陈醋理化性质的检测,其检测效果良好、检测效率高。
