ZnSO4对烟灰色红曲霉菌体生长及Monacolin K产量的影响Effect of ZnSO4 on Growth of Monascus fuliginosus and Yield of Monacolin K

摘要(Abstract):
在固态发酵过程中添加ZnSO_4,发现ZnSO_4的添加导致红曲霉生物量明显降低,抑制烟灰色红曲霉(Monascus fuliginosus)AQB2的生长,有利于次级代谢产物Monacolin K的产生。当添加0.1%ZnSO_4时,MK产量最高,达到29.56 mg/g,较未添加ZnSO_4提高了2.18倍。进一步研究发现ZnSO_4的添加有利于形成酸式MK,且pH会影响酸式MK产生,pH升高,酸式MK产量也增加。当添加0.1%ZnSO_4时,酸式MK产量为23.98 mg/g,是未添加ZnSO_4时酸式MK产量的1.94倍,MK开环率为81%。ZnSO_4在提高MK总产量的同时也保持了较高的开环率,为工业化红曲霉固态发酵调控高产酸式MK提供了参考。
