曲霉型豆豉发酵过程中的成分变化The component change during Aspergillus-type-douchi preparation

摘要(Abstract):
以埃及曲霉Y20为发酵菌株生产豆豉,对发酵过程中氨基酸、有机酸和异黄酮等风味成分和功能性成分的变化进行了分析,通过与自然发酵产品作对照,对纯种发酵豆豉的品质进行评价,以考察Y20纯种发酵生产曲霉型豆豉的可行性。
