液态发酵米醋稳定性研究Study on the Stability of Rice Vinegar by Liquid Fermentation

摘要(Abstract):
醋含有多种有机酸、酯类、酮类和生物活性物质,长期食用具有保健功效。但食醋在储存过程中会产生浑浊或沉淀,严重影响其品质。文章通过分析液态发酵米醋上清液与沉淀的组分,采用酸性蛋白酶和糖化酶法对液态发酵米醋稳定性进行探究。结果表明,酸性蛋白酶和糖化酶处理均可明显提高液态发酵米醋稳定性。酸性蛋白酶添加量为600U/g、反应时间为3h时,液态发酵米醋稳定性可以延长至少3周。糖化酶添加量为400U/g、反应时间为8h时,液态发酵米醋透光率增加了39.08%,放置5周时,其透光率仍为64.56%,较原醋高了11.60%。
