摘要(Abstract):
辣椒是一种全世界范围内广泛种植和消费的蔬菜和香辛料。辣椒具有很高的营养价值与保健功能,产品开发潜力巨大。综述了辣椒在抑制肿瘤、降血脂、降血压等方面的营养保健功能,分析了辣椒的加工利用途径。
