纤维素酶、半纤维酶及果胶酶提取黄姜色素的研究Study on extraction of yellow pigment from Ddioscorea zingiberensis with celluase,Hemicellulase and pectinase

摘要(Abstract):
通过单因素及正交试验研究了纤维素酶、半纤维素及果胶酶同时添加对黄姜色素提取的影响。复合酶提取黄姜色素的最佳工艺条件为:纤维素酶及半纤维素酶的加量均为6.0 mg/g黄姜粉,果胶酶加量为12.5 mg/g黄姜粉,pH为4.6,于60℃下提取4.0 h。
