贵州红酸汤营养品质及呈味特征分析Analysis of Nutritional Quality and Flavor Characteristics of Red Acid Soup in Guizhou Province

摘要(Abstract):
为明确贵州红酸汤营养品质与呈味特征,试验以7种市售贵州红酸汤为材料,对其基础营养、矿物质、功能性成分、有机酸、游离氨基酸以及滋味特征等指标进行分析。结果显示:不同红酸汤中基础营养、矿物质、功能性成分、有机酸、游离氨基酸含量存在差异(p<0.05)。7种贵州红酸汤均属高钾低钠食品,且钙、镁、磷含量相对较高。有机酸均以乳酸含量最高,为5.07~11.50g/kg,柠檬酸和苹果酸次之。红酸汤功能性成分丰富,N2样品多酚和黄酮高达92.86mg GAE/100g和58.99mg RE/100g。共检出17种游离氨基酸,以Y2样品总游离氨基酸含量最高(1761.15mg/100g),是其他红酸汤的2~8倍。根据呈味特征,以鲜味和甜味氨基酸占优势,主要贡献者为谷氨酸和丙氨酸。电子舌分析表明,贵州红酸汤以酸味为主,伴随咸、鲜味。这些结果为贵州红酸汤品质评价和综合开发提供了科学依据。
