六种天然香辛料的生理活性及研究进展Research Progress on the Physiological Activities of Six Natural Spices

摘要(Abstract):
我国的香辛料资源丰富,这为香辛料的研究提供了方便。近年研究结果表明,香辛料中含有多种化学物质,如酚类、醛类和生物碱等,它们在给予植物各种辛香气味的同时还被证实有抗氧化、抗炎、抗肿瘤等多种生理活性。文章选取日常生活中常见的辣椒、花椒、蒜、生姜、肉桂和八角茴香6种香辛料进行综述,介绍了它们主要的化学成分及生理活性,旨在揭示天然香辛料的潜在应用价值,为天然生物活性药物的开发提供依据。
