电子舌对酿造食醋与配制食醋的区分辨识Electronic tongue for fermented vinegar and blended vinegar discrimination

摘要(Abstract):
研究应用电子舌技术,对台州地区生产和销售的酿造食醋与配制食醋进行了检测。研究表明,电子舌检测结果进行主成分分析后,其主成分1和主成分2的得分图上,酿造食醋和配制食醋的落点在各自的区域范围内而互不干扰,说明电子舌对台州生产和销售的酿造食醋、配制食醋有很好的区分效果。
