复合调味料对真空包装海鲈鱼片的保鲜性能The Preservation Properties of Compound Seasoning on Vacuum Packed Lateolabrax japonicas Fillets

摘要(Abstract):
为延长海鲈鱼片的货架期,探究调味料对其贮藏品质的影响,以调理鱼片在贮藏期间感官评分、菌落总数、pH、TBA、TVB-N、水分分布、质构指标及微观形貌变化为指标,研究了4℃真空贮藏条件下,调味料中盐、丁香、肉桂及其复合调味料对海鲈鱼片品质的影响。结果表明,经调味料处理后,鱼片的气味、色泽和弹性均有一定程度的改善,有效减缓了鱼片的菌落总数、pH、TBA和TVB-N的上升速度。其中,盐处理使鱼片TVB-N的上升速度降低,持水力增强。丁香和肉桂处理鱼片的TBA上升速度减缓,质构指标下降缓慢,感官评分高于同期其他样品。经复合调味料处理后,鱼片的菌落总数、TBA和TVB-N的上升速度降低,且持水力更高,肌纤维的结构更整齐,肌肉组织更完整均匀。复合调味料有效抑制了鱼体内微生物的生长繁殖和蛋白质、脂肪的氧化,使海鲈鱼片的货架期延长。该研究可为调理水产品的加工生产提供理论支持和技术指导。
