基于川式红汤麻辣味型的薄荷亚麻籽油火锅蘸酱研发及风味分析Research, Development and Flavor Analysis of Mint and Flaxseed Oil Hot Pot Dipping Sauce Based on Sichuan-Style Red Soup Spicy Flavor Type

摘要(Abstract):
为降低川式红汤麻辣味的燥热感,开发一款具有薄荷清凉感的火锅蘸酱,该研究以传统川味麻辣火锅汤底为基础,以感官评分为指标,研究薄荷油添加量、亚麻籽油添加量、炒制时间、炒制功率对感官评价结果的影响,在单因素试验结果的基础上进行响应面试验,对制作工艺参数进行优化。结果表明,薄荷油添加量为4%、亚麻籽油添加量为5%、炒制时间为10 min、炒制功率为1.2 kW时,薄荷亚麻籽油火锅蘸酱的感官评分达到(92.65±1.58)分,产品色泽光亮,酱体浓稠适中,兼具薄荷的清香和传统火锅油碟的复合香气特征。经测定,薄荷亚麻籽油火锅蘸酱中含有85种已确定的挥发性风味物质,包括醛类(21种)、醇类(17种)、酮类(16种)、烯类(7种)、酯类(9种)、醚类(5种)、吡嗪类(4种)、呋喃类(2种)、吡啶类(2种)、酚类(1种)、酸类(1种),其中醛类、醇类、酮类、烯类、酯类是蘸酱的主要挥发性风味物质。该研究结果为火锅蘸酱的精深加工提供了理论依据,也为实现薄荷和亚麻籽油原材料的开发和综合利用提供了参考。
