姜黄素与蛋白质相互作用研究进展Research Process of the Interaction Between Curcumin and Protein

摘要(Abstract):
姜黄素具有抗氧化、抗炎、降血脂等多种药理活性和生物活性。姜黄素的利用过程中,姜黄素与蛋白质相互作用影响姜黄素的稳定性和生物利用度,因此姜黄素与蛋白质相互作用机制被学术界广泛关注。文章从姜黄素与蛋白质相互作用对姜黄素理化性质的影响、相互作用机理及影响因素、相互作用的分析技术等方面进行综述,以期为姜黄素和蛋白质相互作用的研究提供理论依据和方法。
