电子舌在食品安全检测领域的研究进展Research Progress of Application of Electronic Tongue Technique in Food Safety Testing

摘要(Abstract):
电子舌技术是近年来迅速发展起来的一项新技术,因为其独特的优点在环境监测、生物医学、化学工程、食品分析等领域展现出广泛的应用前景。介绍了电子舌技术的基本概念、分类以及在食品溯源、食品新鲜度、食品品质分级、掺假鉴别、质量监控、微生物和重金属检测等食品安全检测方面的应用,探讨了电子舌技术在食品安全领域未来的挑战和发展趋势。
