β-环糊精辅助制备脱臭速溶大蒜粉β-Cyclodextrin Assisted Preparation of Deodorized Instant Garlic Powder

摘要(Abstract):
β-环糊精(β-CD)具有外部亲水、内部疏水的独特结构,以及对不良风味的掩盖作用和对活性成分的保护作用。利用β-CD这些独特的结构和性质,采用饱和水溶液法对大蒜超微粉碎物进行包合,制备了脱臭、速溶大蒜粉。通过红外光谱仪和X-射线衍射仪(XRD)对样品的结构和成分进行分析,证实β-CD和蒜粉中的脂溶性成分形成了复合物。以正己烷为溶剂提取样品中的大蒜素,并通过气相色谱-质谱联用仪(GC/MS)对提取物成分进行分析鉴定。结果表明,蒜粉和脱臭蒜粉大蒜素提取液中均含多种含硫物质,且脱臭蒜粉中烯丙基甲基二硫醚和二烯丙基二硫醚的相对含量比普通蒜粉中明显提高。β-CD辅助制备的脱臭速溶蒜粉中的生物活性成分二烯丙基二硫醚的相对含量分别由25.26%提升至50.73%,烯丙基甲基二硫醚的相对含量由9.94%提升至30.45%,同时蒜粉原有的蒜臭味也得到了极大的改善。实验证明,β-CD具有脱臭及保护敏感生物活性成分的作用。
