摘要(Abstract):
本文研究了大蒜提取物对鱼油的抗氧化作用并探讨其抗氧化机理。实验结果,大蒜提取物对鱼油有很好的抗氧化作用,并且能降低过氧化值,大蒜提取物通过与活泼自由基反应及还原过氧化物和氧化作用。
