植物酵素的发酵微生物、加工技术及潜在生理功能Fermentation Microorganisms, Processing Technology and Potential Physiological Functions of Plant Enzymes

摘要(Abstract):
植物酵素是一种以水果和蔬菜等为主要原料,添加或不添加辅料,经过微生物发酵制得的酵素产品的总称,因其健康的保健理念而受到大众的关注和喜爱。植物酵素富含益生菌、维生素、矿物质、特定的生物活性成分等,不仅含有植物本身的营养成分,而且微生物可将植物中的大分子转化为小分子的营养素,可更好地被人体吸收和利用。植物酵素具有抗氧化、消炎抑菌、增强免疫力和抗肿瘤等潜在功能,这些功能受发酵基质、发酵微生物和加工技术的影响。但是,这些功能大多是基于体外实验得出的,缺乏动物实验和人群实验的验证。文章对植物酵素生产中常用的发酵微生物、加工技术和潜在生理功能等进行了系统性的综述和讨论,为植物酵素产业的健康发展提供了理论参考。
