预制菜肴发展现状及其关键烹饪工艺机理研究进展Development Status of Prepared Dishes and Research Progress of Key Cooking Process Mechanism

摘要(Abstract):
预制菜已成为我国食品行业发展速度最快的品类之一。然而,我国预制菜行业起步较晚,目前还存在概念标准不完善、技术含量不足等问题。因此,文章分别梳理了国内外预制菜行业的发展现状,对其烹饪过程中所应用的关键工艺(预处理、熟化、复热)进行整理,并总结了各种加工技术对预制菜的作用机理,进而提出预制菜关键烹饪工艺的优化思路,为产品加工中技术的选择提供了理论支撑,以期为我国后续预制菜产品的开发提供参考。
