复合保鲜剂调控鲜湿鱼面的品质特性研究Study on the Quality Characteristics of Fresh and Wet Fish Noodles Regulated by Compound Preservative

摘要(Abstract):
针对鲜湿鱼面货架期短等问题,通过添加复合保鲜剂,以达到改善鲜湿鱼面品质和延长货架期的目的。探究有机酸等保鲜剂对其品质的影响。相比对照组,实验组红外光谱中O-H吸收峰发生蓝移、C■O、-CO-NH-键吸收峰发生偏移;流变特性、糊化特性等得到改善;结合水的能力和贮藏特性得到有效提高。结果表明,添加0.7%复合酸、0.1%A、0.28%葡萄糖酸-δ-内酯、0.025%乳酸链球菌素的复合保鲜剂(0.7%CAGN)为最优组。该研究对传统食品的推广和水产品加工有一定的借鉴意义。
