乳酸菌和酵母菌的添加对低盐酱油品质的影响Effects of the Addition of Lactic Acid Bacteria and Yeast on the Quality of Low-salt Soy Sauce

摘要(Abstract):
在低盐酱油发酵过程中添加嗜盐四联球菌TS71和鲁氏酵母A22,分析比较低盐酱油添加四联球菌TS71和鲁氏接合酵母A22前后理化指标、挥发性风味物质和生物胺的变化。结果表明,相比未作添加的低盐酱油,添加嗜盐四联球菌TS71和鲁氏酵母A22发酵后总酸、总酯含量和酒精度分别由14.82g/L,68.42g/L,0.08%vol提高至18.91g/L,81.66g/L,1.89%vol,氨基酸态氮和还原糖基本保持不变。挥发性风味成分分析表明,醇类和酯类挥发性物质占比升高,由原来的44.16%和1.31%分别提高至59.22%和12.65%,醛类和酸类挥发性物质占比降低,由原来的10.71%和13.81%分别降低至6.42%和5.05%,酱油的香味更加浓郁。添加嗜盐四联球菌TS71和鲁氏酵母A22后,低盐酱油的生物胺由40.3mg/kg降低为36.88mg/kg。
