基于亚麻籽油复配的面制品调味油健康化改良及其品质评价Healthy Improvement and Quality Evaluation of Seasoning Oil for Flour Products Based on Flaxseed Oil Compounding

摘要(Abstract):
传统面制品调味油大多采用大豆油作为基底,但其营养成分单一,缺乏对人体健康至关重要的ω-3脂肪酸,且脂肪酸比例失衡可能增加患慢性疾病的风险。为改善这一问题,该研究通过复配30%亚麻籽油与大豆油,成功将ω-6和ω-3的比例优化至2.5∶1,显著提升了调味面制品的营养价值。感官评价结果表明,添加30%亚麻籽油的调味面制品在感官品质上显著优于传统大豆油的调味面制品。通过对4种植物油(亚麻籽油、大豆油、菜籽油、橄榄油)的理化性质和吸油特性进行系统分析,发现亚麻籽油凭借其优异的润湿性和适宜的黏度,既保证了吸油率,又避免了因过度渗透导致的质地松散。此外,贮藏实验证实亚麻籽油在37℃下具有良好的贮藏稳定性。综上所述,亚麻籽油复配方案为传统高脂零食向营养健康化产品转型提供了科学依据和技术支持。
