酶法水解酱渣蛋白的工艺研究Study on Enzymatic Hydrolysis Process of Sauce Slag Protein

摘要(Abstract):
利用酶解法水解酱渣中的蛋白质得到小分子肽。以水解度为指标,筛选最佳水解酶,并对酶解工艺进行优化。结果表明:木瓜蛋白酶为水解酱渣蛋白的优选酶,最佳酶解工艺:温度50℃,水解4h,酶用量2.5%,该条件下水解度为28.5%。
