玉米黄素提取及应用研究进展Progress of research on utilization and extracting of zeaxanthin

摘要(Abstract):
玉米黄素是一种天然类胡萝卜素。大量研究表明,它具有预防老年性黄斑病变、白内障、心血管疾病以及抗癌等功效,和人类健康密切相关。文章综述了玉米黄素的性质、提取方法、生理功能以及在食品方面的应用,并对其应用前景进行了展望。
