低GI豆豉火腿方便粥的研制及其营养特性验证Development of Low-GI Douchi and Ham Instant Porridge and Verification of Its Nutritional Characteristics

摘要(Abstract):
豆豉是西南地区特色调味品,具有一定的功能性,文章以豆豉为原料,辅以火腿、黑米等,开发一款低血糖生成指数(glycemic index, GI值)方便粥(TY),以其他两款市售方便粥(Y1和Y2)为对照,分别测定上述3款方便粥的营养因子、体外抗氧化活性、模拟体外消化能力和GI值等指标,以验证TY的营养特性。实验结果表明,TY的营养成分含量高于Y1和Y2,TY的功能性成分含量和抗氧化性介于Y1和Y2之间;TY的快消化淀粉含量显著低于Y1和Y2,慢消化淀粉和抗性淀粉的含量均高于市售的Y1和Y2,TY的GI值是三者中最低的,为53.59,属于低GI食品的范畴(GI≤55),同时TY的感官指标、理化指标均符合国家食品安全相关标准,说明TY具有一定的市场推广前景。
