食醋的功能特性及有害物质The Functional Properties and Harmful Substances of Vinegar

摘要(Abstract):
食醋是拥有悠久历史、应用十分广泛的调味品。食醋具有丰富的功能特性,但同时也存在少量的有害物质。文章综述了食醋的抗菌、抗氧化、抗糖尿病、抗癌症及肿瘤、抗肥胖、降胆固醇、抗高血压的特性以及有害物质的研究进展,其重点在于食醋的功能特性及应用。
