蛋清蛋白-鹰嘴豆分离蛋白对牛肉糜凝胶特性的影响Effect of Egg White Protein-Chickpea Protein Isolate on Gel Properties of Minced Beef

摘要(Abstract):
利用蛋清蛋白和鹰嘴豆分离蛋白改善牛肉糜的凝胶特性。该研究将蛋清蛋白(egg white protein, EWP)和鹰嘴豆分离蛋白(chickpea protein isolate, CPI)复配成不同比例的复合蛋白溶液添加至牛肉糜中,以牛肉糜凝胶的质构特性、持水性、蒸煮得率和微观结构等为考察指标,探究蛋清蛋白和鹰嘴豆分离蛋白复合蛋白溶液对牛肉糜品质的影响。结果表明,与单一蛋白相比,复合蛋白溶液可显著提高牛肉糜凝胶的弹性、持水性、蒸煮得率(P<0.05),EWP-CPI的复配比例为1∶3时,牛肉糜凝胶的弹性达到最大值,持水性得到改善,微观结构更加紧密有序。
