摘要(Abstract):
大豆发酵制品是以东南亚国家为主的传统食品或调味品,含有多种生理活性成分,对人类的健康具有重要意义。对国内外传统发酵大豆制品的功能成分研究进行了总结,并对其未来的开发作出了展望。
