酱油渣中大豆异黄酮碱水法提取工艺研究Research on Extraction Technique of Isoflavone from Soy Sauce Residue by Alkali Hydrolysis

摘要(Abstract):
以酱油渣为原料,脱脂处理后碱水解,使酱油渣中的丙二酰基异黄酮转化为葡萄糖苷型异黄酮,再对其进行酸水解,经旋转蒸发后获得大豆异黄酮提取液,测定提取率。研究结果表明,碱溶液的浓度是主要的影响因素,碱溶液最佳浓度为2.0mol/L,水解温度为60℃,水解时间为35min,然后在55℃条件下进行酸水解2h,每1.0g的酱油渣样品中异黄酮含量是78.93mg。
