摘要(Abstract)：
烟73葡萄是酿酒调色葡萄中的优良品种,其果皮和果肉均呈现紫色,实验用63%的乙醇提取烟73葡萄皮及果肉中的色素,经大孔吸附树脂HPD-100A纯化后通过紫外可见光谱及化学分析法对其进行定性分析,确定为花青素类,并利用pH示差法测定其含量,结果显示,烟73葡萄皮及果肉中总花青素含量高达313.9 mg/100 g。
