蜂蜜中多酚类物质的定量分析及其在蜂蜜种类鉴别中的应用研究The Quantitative Analysis of Polyphenols in Honey and Their Application in the Identification of Honey Species

摘要(Abstract):
基于二阶校正方法的"二阶优势",利用液相色谱-质谱联用仪对蜂蜜中多酚类物质进行了定性定量分析,并利用相关定量结果,成功实现了3种蜂蜜的品种鉴别。首先,利用交替三线性分解算法建立了目标分析物的校正模型,得到了良好的分辨结果,所有分析物的线性相关系数在0.9904~0.9990之间,回收率为93.2%~100.1%,说明文章的分析策略准确可行;其次,利用建立的校正模型对3种蜂蜜中的4种多酚类物质的含量进行了测定,在众多未知干扰物质共存下,克服了仪器噪声干扰和基线漂移问题,得到了槲皮素、山奈酚和白杨素3种多酚准确的定量结果,加标回收率的范围为86%~112%,基本令人满意;再者,利用灵敏度、检测量及预测均方根误差等品质因子对所发展方法的优劣进行了评价;最后,基于3种多酚的定量结果,尝试对3种蜂蜜进行鉴别分析,区分效果明显。结果表明:该方法是一种快速、高效、精准的定量分析方法,以期为食品监管部门提供蜂蜜品质控制的依据。
