基于时间连续性的复合鸡精调味料动态多属性决策Compound Chicken Essence Seasoning Dynamic Multi-attribute Decision Making Based on Temporal Continuity

摘要(Abstract):
针对复合鸡精调味料动态感官评价过程中的时间连续效应,通过添加5种不同淀粉原料配制鸡精,同时选取口感、气味和色泽作为参考属性,提出一种基于时间连续性的复合鸡精调味料动态多属性决策方法。结果表明:综合多时刻决策结果,感官评价结果为米粉鸡精>玉米淀粉鸡精>小麦淀粉鸡精>木薯淀粉鸡精>麦芽糊精鸡精,决策方法符合过程逻辑连续性的要求,同时为复合鸡精调味料的配方研发和新型调味料的产品设计提供了理论依据。
