昭通酱的GC-MS检测方法优化及特征风味物质鉴定Optimization of GC-MS Detection Method for Zhaotong Sauce and Identification of Characteristic Flavor Substances

摘要(Abstract):
昭通酱为高盐日晒复合发酵酱,特征风味尚缺统一表征。该研究优化其前处理和GC-MS方法,解析4款主流商品挥发性物质,并以主成分分析和相关性分析厘清各种风味关联。结果显示,昭通酱挥发性物质的最优萃取条件为70℃、40 min,添加NaCl与蒸馏水可提升效果;GC-MS最佳分离条件为50℃保持3 min,以5℃/min升至100℃保持10 min,以6℃/min升至280℃保持10 min;从4种昭通酱中鉴定出14种共有关键风味物质,描述其特征风味。主成分分析区分出“香辛脂香”、“清甜烤香”两类风味簇,相关性热图明确了各种风味的协同和拮抗关系,为昭通酱的风味标准化、差异化产品开发、品质控制及市场化转化提供了科学依据。
