AHP-CRITIC权重分析富宁八角干燥品质及优选工艺AHP-CRITIC Weight Analysis of Drying Quality and Optimal Process of Funing Star Anise

摘要(Abstract):
我国是全球最大的八角生产地,云南、广东、广西等地均有广泛种植,其中云南省富宁县是全国八角种植面积最大的县。富宁作为少数民族聚居地和国家级贫困县,八角产业的发展对当地经济有着极大的推动作用,但由于富宁湿热的气候,严重缺乏高效的八角干燥工艺以满足高品质脱水八角产品的生产。基于此,该研究利用AHP-CRITIC权重分析与不同干燥条件处理设计融合的先进分析手段,对富宁八角干燥工艺进行综合优选,并对品质进行全面解析。结果表明,Page模型是描述八角热泵干燥的最佳模型,八角干燥符合降速干燥特征,其中多因素对干燥效果的综合影响表现为漂烫温度>干燥温度>湿度>漂烫时间,优化后的最佳干燥加工工艺为漂烫温度95℃、漂烫时间2 min、干燥温度85℃、湿度30%。在此条件下,干果碎口率为9.12%,总色差值为72.77,复水能力为2.07 g/g,干燥时间为25 h,气味响应值为1.79,反式茴香脑含量为92.55 mg/g。该研究结果可为鲜八角的实际干燥加工提供理论依据,助力富宁八角产业发展。
