摘要(Abstract)：

研究了孜然挥发油微胶囊的生产工艺。选用β-环糊精作壁材,采用四因素三水平响应面设计确定最佳微胶囊生产条件。实验确定孜然挥发油微胶囊化的最佳工艺:芯材与壁材比为6∶7、进风温度210℃、可溶性固形物含量30%、均质压力25MPa,在此条件下挥发油的理论包埋率为86.7%。
