二次通用旋转组合设计结合模糊数学综合评价法优化大蒜多糖固体饮料配方Optimization of Formula of Garlic Polysaccharide Solid Beverage Using Quadric General Rotary Unitized Design Combined with Fuzzy Mathematics Comprehensive Evaluation Method

摘要(Abstract):
大蒜多糖因其生物活性和加工特性而备受关注。该研究采用大蒜多糖为主要原料,以感官评分为评价标准,利用二次通用旋转组合设计结合模糊数学综合评价法优化大蒜多糖固体饮料的工艺配方,并对其进行品质分析,得到配方为大蒜多糖添加量4.5 g、菊粉添加量7.7 g、柠檬酸添加量0.1 g、甜菊糖苷添加量0.04 g、DL-苹果酸添加量0.02 g、柳橙粉添加量1.6 g,在此条件下制得的固体饮料感官评分最高,为90.6分。此配方下生产的固体饮料产品水分含量为5%,总糖含量为25%,膳食纤维含量为80.8%,休止角为31°,水溶性指数为94%,堆积密度约为0.88 g/cm~3,溶解时间约为61 s,均符合国家固体饮料标准。
