植物乳杆菌发酵红枣汁的总酚变化动力学研究Study on Kinetics of Total Phenol Changes in Red Jujube Juice Fermented by Lactobacillus plantarum

摘要(Abstract):
为探究红枣汁发酵过程中总酚含量的变化及动力学特性,利用L.plantarum CICC 20022发酵红枣汁,对红枣汁发酵过程中活菌数和理化成分的变化进行分析,建立菌体生物量和总酚含量变化动力学模型,并验证模型的可行性。结果表明,在发酵过程中,L.plantarum CICC 20022呈现良好的增殖能力,发酵12 h时活菌数达到峰值8.66 lg CFU/mL。可滴定酸含量呈上升趋势,总糖含量变化趋势与其相反,发酵24 h时总糖含量降至0.04 mg/mL。总黄酮含量先升高后降低,发酵8 h时总黄酮含量为23.91μg/mL,发酵24 h时总黄酮含量降至10.91μg/mL,总酚含量整体呈上升趋势。以Logistic方程建立的菌体生物量动力学模型和以Boltzmann方程建立的总酚含量变化动力学模型的试验值与理论值平均误差均小于5%,表明构建的模型可以很好地反映红枣汁发酵过程中的动力学特征。
