酶联免疫吸附技术在食品安全检测中的应用Application of Enzyme-linked Immuno Sorbent Assay in Food Safety Testing

摘要(Abstract):
酶联免疫吸附法(ELISA)具有方法简捷、检测成本低、分析容量大等优点,适合于复杂基质中的微量成分分析,受到越来越多人的青睐。简单概述了ELISA技术,并从农药残留、兽药残留、违禁添加物、病原微生物和生物毒素以及转基因食品安全性等方面,对该技术在食品安全检测中的应用进行详细的介绍,提出了ELISA技术存在的问题和相应的解决方法,并对该技术进行了展望。
