摘要(Abstract):
大豆发酵食品是我国的一种传统食品,含有丰富的生理活性物质。文章综述了国内外发酵豆制品包括豆豉、腐乳、酱油的抗氧化能力,并对发酵豆制品中的抗氧化成分做出分类总结。
