摘要(Abstract):
甜面酱作为中国传统的发酵酱制品,因其独特的风味而广受欢迎。甜面酱的感官特性与发酵过程中微生物的代谢活动密切相关。文章概述了甜面酱的生产流程,深入分析了甜面酱中主要微生物的种类、代谢特性及不同微生物之间的相互作用,讨论了微生物多样性对甜面酱感官特性(滋味、香气、色泽、质地)的具体影响,旨在为甜面酱感官特性的改良提供参考。
