中式烹饪食品挥发性风味物质研究进展Research Progress on the Volatile Flavor Compounds in Chinese Cooking Food

摘要(Abstract):
中式烹饪食品以色香、味全、状美等特色享誉全球,烹饪食品的风味更是影响其品质的重要因素之一。挥发性风味物质的研究是近年来食品领域的研究热点。文章综述了中式烹饪食品挥发性物质方面的研究,就烹饪中风味物质组成和提取方法、烹饪食品风味物质的分析方法及不同烹饪方式和调味料对风味物质形成和菜品整体风味的影响做了相应的总结和探讨,为进一步探索中式烹饪食品风味物质提供了一定的理论支撑。
